Scottish Potted Chicken Potting is the traditional Scottish way of preserving meat. Originally, meats were potted by being cooked in large jars, sealed with suet, then strewn with herbs to deter insects. This modern method is simpler and done on a smaller scale. Modern potted chicken is not really a preserve, but will keep in the fridge for several days, so is good to make in advance.
